Raw soybeans are processed to extract organic soy lecithin. The process starts by extracting the oil using a chemical solvent, followed by processing the oil to then separate the lecithin. The lecithin contains fat, calories, omega-3 fatty acids, omega-6 fatty acids, vitamin E, vitamin K and choline. The brown lecithin is a viscous/ semi liquid syrup like liquid with characteristics of soya beans. It can be used as stabilizing agent, release agent, wetting agent, mixing & blending agent, surface active agent, to name a few.
